Can I sharpen any knife with the RollSharp?

RollSharp is compatible with a wide range of knives, including kitchen knives, cleavers, most smooth-edged hunting knives, and folding knives with a smooth edge. Blades that are not suitable for sharpening with RollSharp are those found on bread knives and scissors.

Can I sharpen damask knives with the RollSharp?

Knives crafted from Damascus steel possess exceptionally high hardness, often raising questions about the optimal method for re-sharpening such hard blades. RollSharp features a high-efficiency diamond wheel, a material harder than Damascus steel. As a result, even these exquisite knives can be effectively sharpened with RollSharp. Furthermore, the consistent 18, 15, 20 or 22 degree angle ensures that only the cutting edge is honed, preventing damage to the expensive blade.

Can I sharpen ceramic knives with the RollSharp?

Ceramic is not magnetic, which means knives with ceramic blades cannot be secured onto the magnetic holder. Consequently, RollSharp is not suitable for ceramic knives.

Can I sharpen my one-sided ground Japanese knife with RollSharp?

Yes, this is achievable. Japanese knives are often single-beveled, requiring sharpening on one side only. With the RollSharp magnetic holder, you can select between 15, 18, 20 and 22 degree sharpening angles. This allows you to alternate sharpening from both sides and, consequently, sharpen only one side of the blade.

Most knives come from the factory with an angle ranging between 15 and 20 degrees, although it may not always be uniform. Subsequent uses, after the knife has slightly dulled, require only a few forward and backward strokes as the grinding angle has already been established during the initial sharpening.

How long does the RollSharp sharpening disc last?

Diamond is the hardest material on Earth and is considered the most durable sharpening material for high-quality kitchen knife steels. When RollSharp is used correctly, you won't need to replace it very often. We do offer replacement sharpening disks that can be easily interchanged with all RollSharp Knife Sharpeners.

Is the RollSharp suitable for sharpening serrated knives or bread knives?

The RollSharp roller grinder is not suitable for serrated knives. It can grind away the serrations on the blades of bread knives and may damage the surface of the diamond sharpening disc wheel.

How do I sharpen knives that are taller than the sharpening disc with RollSharp?

For taller knives, such as a large Chinese chef's knife, the RollSharp Sharpener can be placed on top of a Cutting Board to elevate the grinder to the level of the cutting edge.

What is the difference between all the sharpening angles on the RollSharp block?

Additionally, when you alter the angle from 20 degrees to 15 degrees, you will inevitably remove a significant amount of metal from your knife over time.
